To me, a good slow-cooker recipe is one in which you take a bunch of ingredients, throw them in the crockpot, and cook everything up together–no pre-cooking or post-adding to be found. This BBQ Beer Can Shredded Chicken, from Stick a Fork in it, fits the bill perfectly. Throw in some boneless chicken, seasonings, beer, and barbecue sauce, turn on the slow-cooker and go about your day. At dinnertime, you’ll have the easiest, most delicious dinner that the whole family will love.
(image and recipe from Stick a Fork in it)
3 pounds boneless, skinless chicken breasts (about 6 large)
1 tbsp onion powder
1 tbsp paprika
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1 cup beer (any kind you like)
3-3 1/2 cups of barbecue sauce
Add all the ingredients, other than the chicken into the bowl of a crockpot and stir to combine. Add the chicken and cover with the sauce. Cook on low for about 6 hours.
Shred the chicken, and serve on toasted kaiser rolls and top with coleslaw.
