Sunday Suppers with Lunchbox Love–Mama’s Meatloaf

To me, meatloaf is such a perfect meal for a Sunday dinner. It’s easy, everyone eats it, and, with a side of mashed potatoes and creamed spinach, it’s a classic. I love this version from Back to her Roots and I usual double the recipe so I have leftovers for the week.

Ingredients:
For the glaze
3/4 cup ketchup
3/4 cup water
2 tablespoons mustard
2 tablespoons brown sugar
1/2 teaspoon chili powder

For the Meatloaf
1 pound ground chuck
1/2 cup bread crumbs
1 egg
3 tablespoons onion, diced finely
3 tablespoons green pepper, diced finely
1 teaspoon chili powder
1 tablespoon Worcestershire sauce

Instructions:
Preheat oven to 350°.

Mix all glaze ingredients together and set aside.

Mix all loaf ingredients together and form into a greased loaf pan. Pour glaze over loaf.

Bake at 350° for one hour or until sauce is bubbly and middle of meatloaf is cooked through.

Let rest for 10-15 minutes before slicing and serving.
