Potato Latke Bar

Every year for Hanukkah, we host a party for all of our kids’ friends and their families and, of course, we serve latkes. While we usually make it simple, offering the usual sour cream and apple sauce toppings, this year we’re changing it up and creating a latke bar. We’re serving up a variety of toppings, making the latkes the base for a full, creative meal that everyone can customize themselves.

Sunday Suppers with Lunchbox Love | Potato Latke Bar |


2 large Russet potatoes (about 1 pound), grated
1 large onion (8 ounces), grated
2 large eggs
2 tablespoons all-purpose flour
2 teaspoons kosher salt, plus more for sprinkling
1 teaspoon baking powder
Canola oil

Apple sauce
Sour cream
Shredded cheese
Chopped basil

Place the potatoes in a cheesecloth, or tea towel, and wring, getting out as much liquid as possible.

In a medium bowl mix the potatoes, onion, eggs, flour and salt together.

In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot!
