This Sunday evening, friends from abroad are arriving for a weeklong visit. After such a long flight, I want to make sure our guests are able to enjoy an easy, hearty meal. But, like so many of our weekends, the day is going to be crazy with sleepover pickups, theatre rehearsal, and birthday parties, with a whole lot of cleaning in between. This Slow Cooker Chicken Taco recipe, from 5 Dollar Dinners, is the answer to an easy and satisfying meal that everyone in the house will love.
Slow Cooker Chicken Tacos
1 pound boneless, skinless chicken breasts or chicken thighs
16 oz can of tomato sauce
1/2 cup salsa
2 tablespoons of Homemade Taco Seasoning (or 1 packet of taco seasoning mix)
Suggested toppings: shredded lettuce, salsa, avocado, plain greek yogurt or sour cream, shredded cheese,
Mix the salsa, tomato sauce and spices.
Place chicken in slow cooker and cover with tomato sauce mixture. Cook on low for 8-10 hours. Shred with fork. Taste and adjust seasonings as needed. Serve with tortillas and toppings.
