I make a lot of chicken for dinner in our house. I realized this when, inquiring about the evening meal one day, my son asked, "What's for chicken tonight?" 🙂 I was excited to find this recipe as my kids really enjoy honey-mustard sauces and this one, from Recipe Girl, is super easy and delicious. Serve with rice, pasta, or a vegetable for a perfect meal.
Honey Mustard- Pale Ale Chicken

1/3 cup Dijon mustard
1/4 cup honey
1/2 cup pale ale
2 tablespoons cornstarch
1/2 teaspoon pepper
1 clove garlic, minced
2 tablespoons freshly squeezed lemon juice
1 tablespoon unsalted butter
4 boneless, skinless chicken thighs (or breasts)
salt and pepper
rice, for serving
Preheat the oven to 375 degrees F.
Add the mustard, honey, beer, cornstarch, 1/4 teaspoon salt, 1/2 teaspoon pepper, garlic and lemon juice to bowl. Whisk together until smooth.
Melt the butter in an oven-safe skillet over medium-high heat. Sprinkle chicken with salt and pepper on all sides. Sear chicken on both sides until browned.
Pour mustard sauce over the chicken and bake until the chicken is cooked through (22 to 25 minutes).
Plate chicken over rice. Spoon desired amount of sauce over chicken.
