Just about three weeks into the New Year and many of us are still sticking to our resolutions to eat healthfully. Whether you want to lose weight or just want to eat more home-cooked meals, roasted turkey breast is an easy and delicious food to have in your fridge. I like this recipe, from Oh Sweet Basil, and often like to double the recipe so that I have plenty of meat leftover for the week. Then, I can throw together a quick sandwich or salad with healthy protein to help me stay on track.
Herb Roasted Turkey Breast

Ingredients
3 lb boneless turkey breast, thawed
4 sage leaves, fresh
1 Tbs. thyme, chopped, fresh
Olive oil
1 tsp. kosher salt
1/4 tsp. pepper
Instructions
Place the turkey breast on a flat surface and gently lift the skin to expose the breast. Sprinkle evenly with the salt, pepper, thyme and the sage leave. Place the skin back down and drizzle with olive oil. Bake according to package instructions. Allow the turkey to rest for 15 minutes before slicing.
