Sunday Suppers with Lunchbox Love–Taco Bar

Perfect for next week’s big game! Everyone I know loves tacos and, with a taco bar, carnivores & vegetarians alike can customize their meals to their particular tastes. Make sure you have a wide variety of toppings so everyone is happy but there’s no need to spend hours in the kitchen. With lots of fresh vegetables, cheeses, beans, and salsas, you can have a beautiful spread that allows you to spend time with your guests instead of slaving over the stove.

Fixings:

Taco shells and tortillas
Beef or turkey filling (recipe below)
Grilled steak and/or chicken
Refried beans
Black or pinto beans
Roasted veggies
Shredded lettuce
Chopped tomatoes
Mashed avocado
Chopped onion
Cilantro
Salsa
Sour cream
Shredded cheese (cheddar, monteray jack, mozzarella)
Olives

Beef Taco Filling Recipe (from Punchbowl.com)

Ingredients:

2 tbsp. olive oil
1 1/2 cups minced onion
2 tbsp. minced garlic
3 tbsp. ground cumin
2 pounds lean ground meat
1 tsp. ground red pepper
1 1/2 tsp. kosher salt
1 cups beef broth
1/4 cup tomato paste

Instructions:

Warm the olive oil in a large pan and cook the onions until translucent. Add garlic and cumin and saute for one minute. Add the beef and cook until brown. Add pepper, salt, beef broth and paste and bring to a simmer. Cook about 15 minutes until the liquid is gone.
